Pedro's Pizza has served Adelaide since 1971. The dough is made from a pre-mixed flour formula developed with Laucke, Australia's largest flour supplier, so every store bakes the same crust. Pedro's operates two stores today: Somerton Park and Craigmore.

How did Pedro's start?

Our Story

Pedro's Pizza opened in Adelaide in 1971. Over the following decades, the brand grew to around 20 stores across the city.

The market changed. Home delivery apps arrived. Big chains started delivering direct to the door, something only independent pizza shops used to offer. One by one, most of the original Pedro's stores closed.

One did not. That store was kept alive, and later grown, by Ali Raza, known to the team and to regular customers simply as Raza.

Who runs Pedro's today?

Raza's Story

Raza moved to Adelaide with his family in 2013. That year, he tasted pizza for the first time. Pizza was not part of his Hazara culture growing up, so this was a completely new experience, and he fell in love with it straight away.

He started working in pizza kitchens soon after, at a shop on Magill Road, before joining the Pedro's Somerton Park store in 2017.

At the time, Pedro's sold pizza only, the same as most chains. Raza began adding fresh pasta, burgers, schnitzels, hot chips, and ribs to the menu, so a family could order from Pedro's more than once a week without eating the same thing twice.

The Somerton Park store survived while the others closed. Raza went on to purchase the entire Pedro's franchise. Today, he still works the ovens most nights, splitting his time between the two stores.

What Makes the Dough Different

Every Pedro's store uses the same pre-mixed flour formula, developed with Laucke, Australia's largest flour supplier. The same amount of flour, water, and yeast, mixed the same way, every time. The dough rests overnight to rise properly, then comes to room temperature before it goes in the oven.

This means the crust is the same whether you order from Somerton Park or Craigmore. Nothing is left to guesswork.

What ingredients does Pedro's use?

Where the Ingredients Come From

The pepperoni comes fresh every week from a butcher on Goodwood Road, Adelaide, who has won multiple national awards. It is never frozen. The mushrooms are A-grade, at close to double the price most pizza shops pay for the standard grade. The cheese is the most expensive grade offered by Pedro's supplier, used as standard on every pizza, not as a premium upgrade.
